But, since it is just adjacent and connected to the world-famous MGM Grand, the possibilities at this hotel is actually limitless. Guests of the Signature stay in a relaxing and affordable suites with complete access to some of MGM Grand&#8217;s amenities. </p>
<p>If Wynn follows an urban meets nature theme and Bellagio is for “Elegance through Art”, high quality service is The Signature&#8217;s signature feature. All The Signature&#8217;s guests agree that it has the friendliest and most accommodating staff in the whole of the Strip. The non-smoking hotel also has a variety of luxurious one-bedroom, two-bedroom and junior suites, with balconies providing excellent views of either the whole busy area of the Strip or the surrounding Las Vegas mountains. Each of its rooms have gigantic and comfortable beds with feather blankets, marble bathrooms with Jacuzzi, a kitchenette equipped with microwave, stove and kitchenware, LCD flat screen televisions with DVD players, Wi-Fi and more.<br />

<p>Tower 2 is The Signature&#8217;s center for fine dining. Those in Tower 1 and 3 don&#8217;t have to worry about not being able to get a quality dining experience. A gourmet menu is available 24 hours daily in all three towers for those who want to dine in-suite. Plus, all three towers are easily accessible by a roofed walkway. </p>
<p>The Signature&#8217;s shopping location is at Tower 1. The tower houses a gift shop and ATM. The Signature also may not have its official “Spa”, but its guests can call for separately paid in-room massages. Aside from being private, this massage service is also more comfortable as it is done in one&#8217;s own room.<br />
The Signature also doesn&#8217;t have a resident casino. But to some, this characteristic actually makes The Signature more appealing than other Strip hotels. No Casino means no walk-ins thus, lesser people around the area and no noise. </p>

			<content:encoded><![CDATA[<p>So, during your next visit to Las Vegas, why should you eat at a restaurant that carries the same name as that-fast-food-store-in-your-area-that-is-particularly-suffering-from-obscurity? It&#8217;s simply because the “Alex” one at Wynn Las Vegas isn&#8217;t a bit similar to that measly eatery you&#8217;re trying to compare it with.</p>
<p>With a chef that&#8217;s technically known to all top restaurant professionals and an interior that&#8217;s as grand as a castle, Alex exudes originality and elegance that its name may not “straightforwardly” portray. Elain Wynn, the wife of Mr. Wynn (that man everyone “breathing” in Las Vegas should know of), held her lavish birthday party at Alex and that was before Wynn Hotel and the restaurant even opened. Even Elizabeth Taylor didn&#8217;t miss the chance to experience Alex before anyone else can (she stopped by at Alex that very same weekend). Something to boast for in the future, probably?</p>
<p>But, why the name? Simple. Alex wanted to be different (there&#8217;s a restaurant naming trend in Las Vegas, you know) and decided to simply dedicate its “one hell of a luxurious space” to the head chef. Right, the chef being referred to here is Alessandro Stratta, known as Alex to his friend and in his now, AAA Five Diamond Restaurant.</p>
<p>Stratta, being a really popular chef, labored for years at Renoir at the Mirage before he got his own personal space. But since Renoir was a bit “small”, he didn&#8217;t get much of an audience and the chance to really air out his culinary talents. Now he has surfaced as signature chef at Wynn, with his “Alex”, costumed with a persistently orange color scheme, and appointments such as ornate curtains and top-end table settings, offering unique French and American dishes in good old Italian spirit.</p>
<p>Although its name sounds very casual, eating at this restaurant comes with a really hefty price tag. Anyway, it offers a tasting menu format with a price point that varies from $70 to $350 for a six-course extravaganza that matches great wines of France with each course (and everything good doesn&#8217;t come cheap these days).<br />
So, what are THE dishes to try at Alex? For appetizers, it&#8217;s a sin to miss lobster quenelles with crayfish and sparagus gratin with morels and buttered hop sprouts. For main courses, opt to spend your dollars for &#8220;Tuscan-style&#8221; pork with stewed tomatoes and mascarpone polenta and stuffed rabbit with prosciutto, spring vegetables and green lentils.</p>
<p>Now the desserts. Stratta&#8217;s longtime pastry chef, Jenifer Witte, offers the most orgasmic dessert menu in Las Vegas. This includes warm peaches with mascarpone crepes and fresh mint soufflé, and chocolate with warm orange caramel and coco-orange tuiles. We promise, all these taste so good, they should be outlawed.<br />
What about the service? The same good old personal service at Renoir is now at Alex, as many of the chef&#8217;s loyal crew followed him here.</p>
<p>Alex is open from 6 PM to 10 PM from Thursday to Tuesday (it&#8217;s closed during Wednesdays). Take note also that the restaurant requires reservations and follows a “no casual attire” dress code.</p>

			<content:encoded><![CDATA[<p>Now, why is Switch named as such? It&#8217;s because this restaurant at the Encore hotel can change your ideas about dining in a hundred-eighty-degree turn. Just where else in Las Vegas will you find a restaurant that literally goes through various physical transformations throughout the evening?</p>
<p>So, you want to dine at a baroque restaurant, a traditional Italian Villa and an open restaurant but you don&#8217;t have enough money to do so? Switch is your dream come true and, oh, jump for joy as Switch will even hand these dining dreams to you in one night (and obviously, one price). All of these settings are in Mr. Wynn&#8217;s yet another unique creation, following a 20-to-25-minutes rotation for change. Music and intimate lighting also add to the show.</p>
<p>And if Switch&#8217;s thematic changing decors will keep your eyes busy, your palate will be too with the restaurant&#8217;s excellent French-inspired cuisine, spearheaded by Chef Marc Poveidin.</p>
<p>Chef Marc Poveidin is a classically trained French Chef who brings an impressive comeback to Encore Las Vegas. If you&#8217;ve tried Le Cirque, then you know the reason why you should visit this restaurant. With him as the executive chef, expect the very best when it comes to ingredients and preparation.</p>
<p>Switch is particularly known for the SWITCH Seafood tower. This seafood appetizer serves two in a brilliantly sculptured three-tiered platter. Dry ice is beautifully placed at the top tier, while the middle tier holds perfect jumbo shrimp. The bottom tier is the one that carries most of the seafoods—fresh oysters on the half shell, tuna tartare, marinated and mixed with green onion and sesame seeds, lobster medallions, and a bay scallop ceviche. This platter comes with sauces like the traditional tangy cocktail sauce, mignonette sauce, and creamy pink sauce (made with mayonnaise, garlic and chili sauce). The Porterhouse with a Bearnaise sauce and the Braised white coco bean ragu are must-try items as well. </p>
<p>The best way to start your meal “hot” at Switch is by ordering a creamy roasted butternut squash soup. The soup is served with scented foie gras and wild mushrooms.</p>
<p>Switch is also the place to be if you&#8217;re aching to have some good snails. Switch&#8217;s burgundy snails are seared with Pernod and garlic-parsley butter. Beef is also treated as good in this restaurant. Or if you want something light, you can try Marc&#8217;s lobster salad &#8212; a refreshing dish consisting of artichoke, avocado, asparagus, and truffle vinaigrette. </p>
<p>Some of the best dessert options at Switch include a decadent chocolate bar, with layers of chocolate ganache, crispy wafer and hazelnut and a chocolate soufflé served with a cappuccino-flavored crème anglaise.<br />
Oh, if you think that Switch has switched “everything” to get the attention of the active Las Vegas crowd, you&#8217;re wrong. There&#8217;s one thing that Switch isn&#8217;t planning to switch soon &#8212; that heavenly menu we&#8217;ve just talked about earlier.</p>
<p>Switch is open daily from 5:30 PM to 10:30 PM. Take note also that the restaurant suggests that you make a reservation first before visiting. </p>

			<content:encoded><![CDATA[<p>What do you get from an award-winning French and seafood restaurant with interiors that even classic Paris bistro like Aux Deux Magots or Bofinger cannot match and a chef that is a self-confessed perfectionist? Of course, a magical French dining experience. And take note, this restaurant is not even in Paris. Las Vegas is indeed blessed to have Bouchon at The Venetian joining its growing dining scene.<br />
If you&#8217;ve watched Ratatouille, you&#8217;ll know how committed and creative Bouchon&#8217;s head chef is and that you won&#8217;t get dissatisfied from his appetizers to his desserts. With Chef Thomas Keller maneuvering the menu, your dining experience at Bouchon will definitely be memorable. As a committed chef, Keller doesn&#8217;t just rely on “canned” mushrooms for his dishes, he tucks his&#8217; straight from the northwest. He gets his fish not from the Las Vegas market, but from Florida and New York. He also only cooks lambs that came from his favorite farm in northern Pennsylvania.</p>
<p>Keller recreates classic French dishes with his own artistry, while still respecting the authenticity of the &#8220;traditional&#8221;. Take for instance, his grand plateau of fruits de mer, bistro Valhalla. The plateau consists of a whole lobster, 16 oysters, eight shrimp, eight clams, nine mussels and seasonal crab, all ocean fresh and served with a number of sauces. We have to warn you though, that although this dish sounds too-good-to-be-eaten-alone, don&#8217;t try this dish alone (just review its volume and you&#8217;ll see why).</p>
<p>The Best New Restaurant on the Strip (in its opening) and later, The Best Restaurant on the Strip is also known for roast chicken. Now, it&#8217;s hard to get good roast chicken in an American restaurant (especially in Las Vegas), but the search ends here. Bouchon does poulet rôti like no one else, perched on a bed of Swiss chard and sweet cipollini onions.</p>
<p>Bouchon&#8217;s menu is filled with good meat-and-potatoes dishes as well. The best dish to try under this category is steak frites. The dish is a pan-seared flatiron topped with maitre d&#8217;hotel butter (butter mingled with lemon juice, Italian parsley, and salt and pepper) and flanked by a pile of superior French fries.</p>
<p>Aside from dishes that are cooked from all-fresh ingredients, the menu of this 2005 Epicurean Award winner for Best French restaurant is also filled with quality artisan products like boudin noir and blood sausage. You know you won&#8217;t find these anywhere else.</p>
<p>And of course, a review for an award-winning Las Vegas restaurant wouldn&#8217;t be complete without some remarks about the interiors. Matching the fresh and scrumptious menu of this 7,000-square-foot restaurant is its beautifully-designed esplanade facing The Venetian&#8217;s new casino tower. Acclaimed restaurant designer Adam Tihany really knows what the Las Vegas crowd wants as he placed tables right by the patio windows, staring up at Las Vegas&#8217; attractive modernity. Adding up to this warm atmosphere is a handcrafted pewter bar, deep blue velvet banquettes, boldly patterned mosaic floor tiles and antique light fixtures. This is by far, the most attractive and romantic setting we&#8217;ve seen in a Las Vegas restaurant.</p>

<p>If you&#8217;re one of those people who aren&#8217;t into Las Vegas&#8217; way of life anymore, try dining at Rao&#8217;s and get the &#8220;breath of fresh air&#8221; you&#8217;ve been wanting to have.</p>
<p>The magic at Rao&#8217;s starts at the door where a guy named &#8220;bubbles&#8221; will welcome you to the restaurant and lead your way to the tables through a broad corridor, lined with hundreds of celebrity photographs.</p>
<p>Now, you&#8217;re seated at a table. You&#8217;re browsing the menu when, a server suddenly joins you and started telling you stories about Rao&#8217;s tradition and how it has been around for more than a century.</p>
<p>That&#8217;s when it hits you: you&#8217;re not in Las Vegas anymore. Well, that&#8217;s, at least, for a couple of hours.<br />
Rao&#8217;s is a legendary 110-year-old, 10-table, East Harlem Italian restaurant, owned by Frank Pellegrino Jr., and his wife, Carla Pellegrino. This restaurant, exclusive in New York, has entertained many guests and celebrities like Mariah Carey. Now, the couple carried their home-style southern Italian cooking in Las Vegas by opening a larger version (250-seat, to be exact) inside Caesars Palace.</p>
<p>What makes this restaurant the &#8220;diamond&#8221; in the crowd is the &#8220;homey&#8221; feeling that it gives. Since it&#8217;s a family-run business, a relative of the Pellegrinos is on the premises nearly all the time. Plus, the executive chef is Carla herself. </p>
<p>And since, the restaurant follows true Italian tradition, Rao&#8217;s dishes are meant to be served family-style. What&#8217;s better than eating gnocchi, baked clams and colossal shrimp in parsley, garlic and butter like how your mom, or probably your aunt, have prepared them before? Or maybe, better. How about lemon chicken, sauteed broccoli rabe, grilled vegetables, the traditional steak Bisteeca alla Pizziaola and the classic meatballs?</p>
<p>The best way to start your meal at Rao&#8217;s is by ordering Insalata Caprese, a terrific arugula salad lightly dressed with vinegar and oil and shaved parmesan. You also ought to try Rao&#8217;s awesome desserts like tiramisu, gelato and cookies. Don&#8217;t forget to order the densely-flavored ricotta cheesecake as well. Rao&#8217;s food is simple but is prepared into perfection – it&#8217;s simply worth every penny.</p>
<p>Just as everything in this restaurant is taken in the household/family experience way (something that&#8217;s almost non-existent in Las Vegas), when you dine at Rao’s, you become an extended part of a “warm” family.<br />
Rao&#8217;s is open daily from 5 PM to 11 PM for dinner and from 11 AM to 3 PM from Wednesday to Sunday for lunch. Take note also that the restaurant suggests that you make reservations before visiting (well, they should actually require it).</p>
<p>Rao&#8217;s is also perfect for private gatherings. The restaurant offers a private dining room that can accommodate groups up to 16 and comes with dedicated service. Of course, there are also all the personal touches that make Rao&#8217;s a legendary restaurant.</p>

So, if you&#8217;re throwing a big party and you want it to be in Las Vegas, Craftsteak is the perfect place to make reservations.</p>
<p>Now, the question is how big is Craftsteak? Don&#8217;t be surprised, but this 2005 Epicurean Award winner for Best Steak House has room for 260 diners overall. So, is that too big for the private party you&#8217;re planning? Well, Craftsteak, as big a restaurant it is, offers party rooms that can accommodate up to 60 people as well.<br />
But the size isn&#8217;t the only thing in this restaurant that makes it a good place to hold a private party. Of course, there&#8217;s its menu which is a &#8220;breath of fresh air&#8221; from the usual steakhouses. The menu is a feast of natural flavors and the finest ingredients. Aside from the expected grilled steaks (the USUAL steak), the menu also offers choices of grain-fed or grass-fed New York strip steaks. There are also the braised dishes like veal beast, beef cheeks, and duck leg confit. Craftsteak is also particularly good with lobster. And if you&#8217;re planning to invite vegetarians, do so. Vegetarians will surely enjoy Craftsteak&#8217;s side dishes and vegetables prepared roasted, braised, pureed or sautéed. We&#8217;re sure that your vegetarian friends will also like Craftsteak&#8217;s fava bean agnolotti or spaetzle or farro.<br />
The first-course selections to look for at Craftsteak are roasted or smoked sweetbreads, quail, foie gras and lamb tenderloin. </p>
<p>Of course, a good steak dining isn&#8217;t complete without potatoes. Guess, what? Craftsteak has whatever &#8220;kind&#8221; of potato you like with your steak. Potatoes at Craftsteak are available pureed, gratinéed, souffléed, roasted, or fried.<br />
Take note, however, that Craftsteak&#8217;s menu changes seasonally, so some of the dishes that we&#8217;ve mentioned here may be unavailable during your visit. We advice that you inquire about the menu when you make your reservations to know if that&#8217;s really the perfect time for you (and the crowd you&#8217;re bringing) to visit the restaurant. Reservations are optional, but it&#8217;s really better if you do call them before making any final plans.</p>
<p>And, oh, your palate will not only be the busy part of your body at Craftsteak. Your eyes will be too with Craftsteak&#8217;s natural exotic wood flooring, highlights of leather and bronze and the fine wood tables with butcher-block. The steakhouse&#8217;s atmosphere is very simple but elegant. It&#8217;s one of the best interiors we&#8217;ve seen at the Strip, really. And we want to congratulate the designer for he/she perfectly portrayed the restaurant&#8217;s natural approach to food with the design.</p>
<p>If you&#8217;re not really planning to throw a party, but nevertheless, want to try Craftsteak&#8217;s steaks, go ahead, we&#8217;re not discouraging you. Craftsteak is open from 6 PM to 10 PM from Sunday to Monday, 5:30 PM to 10 PM from Tuesday to Thursday, 5:30 PM to 10:30 PM on Fridays and 5 PM to 10:30 PM on Saturdays.</p>

Anyway, if you are in The Shoppes, no matter how “masculine” you are, you will be amazed at how luxurious the retail stores inside it are. Fine stores like Manolo Blahnik, Jimmy Choo, COACH, Marc Jacobs, Ralph Lauren, Michael Kors, Chloé and Prada occupy the corners of this shopping haven at Pallazzo hotel. There is also the sight of the beautiful two-story waterfall that could melt the heart of anyone.</p>

			<content:encoded><![CDATA[<p>Who says that excellent Chinese dining can only be done in Hong Kong and Beijing? Hey, Chinese cuisine is available in Las Vegas too and nothing does it better than Wing Lei Restaurant at Wynn Las Vegas.</p>
<p>To know why &#8220;Wing Lei&#8221; was named as such is to discover all the things that this new Chinese restaurant has to offer. Wing Lei is a clever phonetic play of &#8220;Wynn&#8221;, and its Chinese characters mean &#8220;eternal prosperity&#8221;.</p>
<p>Indeed, the idea of playing with Chinese characters for the restaurant&#8217;s name did not backfire, and Wing Lei quickly achieved parity from “legitimate” Chinese restaurants. Open daily from daily 5:30 pm to 10:30 pm, Wing Lei is now Las Vegas&#8217; new hub for authentic Chinese dining, proven by its carefully-designed interiors and superb menu. The restaurant gives out that ancient Chinese feel, as highlighted by the 100-year-old pomegranate trees surrounding it and the mammoth Botero sculpture in its entourage. Matching this great setting is a fantastic menu maneuvered by skilled Taiwanese chef Richard Chen. Chen&#8217;s baby face belies the fact that he is very comfortable in a variety of the diverse idioms that characterize Chinese cuisine, from simple to complex, everything.</p>
<p>The restaurant&#8217;s dining area will surely make you gasp. Seating is at elegantly decorated tables with gold chopsticks and chopstick holders, and high-backed, red velvet-armed tapestry chairs. These are, by far, the most beautiful restaurant chairs in the whole city, and they have been rumored to cost $1,500 apiece. Wing Lei may be &#8220;pure&#8221; Chinese, but Mr. Wynn never seems far away. Water glasses in the restaurant all have the Wynn signature carved into the base.</p>
<p>Wing Lei&#8217;s menu gives its guests many options, from seasonal and expensive treats, to humbler fare like dimsum and rice dishes. But if you are up for a “superb Wing Lei experience”, do not hesitate to order the Peking Duck dinner. Mind you, no one does duck better than Chen.</p>
<p>Chinese loves seafood, so expect tons of seafood dishes in the menu. Other must-try dishes in Wing Lei&#8217;s menu include shrimp cakes wrapped with Chinese noodle and Tangy raw green papaya salad for appetizers and Crystal Rock shrimp dumplings and rice noodle-wrapped shrimps for main course.</p>
<p>Aside from the Peking duck, Spicy Sauteed, a mix of calamari, diced Chinese sausage, chili and daikon (this is a Japanese radish), is another Wing Lei dish that appeals to Western audiences. Braised Napa cabbage is another dish that earned the same reputation.</p>
<p>Wing Lei dishes that have simpler price tags are also praise-worthy. Go to the menu&#8217;s Rice section and look Fu Chow beef chow fun, a flat rice noodle dish redolent of basil and tender sautéed beef. That would be enough to see how well Wing Lei and Chen manage the restaurant&#8217;s food choices.</p>
<p>Visiting Wing Lei will also give you the access to an excellent wine list and that some un-Chinese desserts. If you swore to have “everything Chinese” during your visit to the restaurant, go for the bird&#8217;s nest tapioca pudding. </p>

			<content:encoded><![CDATA[<p>Although it “lives” near the ambitious Sensi restaurant, the hot new steak house FIX and the perennial AAA Five Diamond Award-winning restaurants Picasso and Le Cirque, Todd English&#8217;s Olives remains as one of the most sought-after restaurants at the Las Vegas Strip&#8217;s Bellagio Hotel.</p>
<p>With Todd English&#8217;s Olives&#8217; simple interiors (as simple as its name, mind you), it is practical to say that it would be easy to overlook this restaurant at Bellagio. But, surprisingly, that would be a mistake. Open daily at 11 am – 10:30 pm, this restaurant is good and popular than ever.</p>
<p>Thanks to the terrific menu of superstar chef Todd English, guests choose to cover their eyes from the inviting artistry of neighboring restaurants to reach Olives&#8217; premises without second thoughts. The menu, which is vaguely Mediterranean, is one-of-its-kind, as Chef English devised it himself, with large influences from Italian cuisine. Anyway, what is more to expect from a superstar chef who once defeated an Iron Chef? Through his dishes, English could transport his guests from the Strip straight to the Adriatic coast. Order lamb ribs slow-braised on creamed corn in a rich lamb reduction and grilled squid and octopus with vinaigrette of chick pea, toasted garlic, tomatoes and parsley as starters to see why we said so.</p>
<p>Olives is also the &#8220;last&#8221; restaurant in Bellagio that serves traditional dishes without enhancements or changes. The restaurant&#8217;s wood-oven flatbreads have always been a classic favorite because of their imaginative toppings. Plus, they are served with three types of marvelous Olive spreads. The same applies for beef carpaccio, Olives&#8217; melt-in-your-mouth wonder. There are also pastas and little dumplings of goat cheese in black-olive-flavored wrapping. Other must-try options in Olives&#8217; menu include the butternut squash tortelli and entrées, a New England-inspired whole Maine lobster on cheddar-cheese potatoes and crackling from a Ritz cracker crust. As for the dessert, even the 15-inch “wonders” (as they say) of other restaurant could not beat Olives&#8217; vanilla-bean soufflé. Take our word for it. This dessert is so good it should be outlawed. And did we mention Olives also serve amazingly good Bloody Marys?</p>
<p>Aside from the menu, for some, Olives is also a great restaurant to dine in to because of its simplistic interiors &#8212; some say that it is a “breath of fresh air”, as most Bellagio restaurants follow their mother-hotel&#8217;s majestic and elegant look. The restaurant&#8217;s masculine aura, which is designed by Jeffrey Beers, features a long bar topped with beige granite, pillars covered in braided leather, onyx-colored tables complemented by chairs upholstered in burnt orange velvet and candle trees, which cast the room in a soft, relaxing light. Olives may be traditional but it certainly has its appeal.</p>
<p>Another good thing about Olives is that reservations are optional. However, if you want to dine on the outside patio that overlooks the amazing Bellagio fountains, it is better to reserve seats beforehand. And oh, before we forget to mention, the restaurant also does not require its guests to wear formal attires.</p>

<p>Eleven years ago, ringmaster Sirio Maccioni, reputed as the &#8220;world&#8217;s most charismatic restaurateur&#8221;, brought his Four-Star culinary magic, Le Cirque, in the Strip when The Bellagio Hotel opened. As one of Bellagio&#8217;s pioneer restaurants, Le Cirque&#8217;s Vegas wing occupies a spot in the hotel that overlooks its 8-acre lake with dancing fountains. Open daily from 5:30 pm to 4:00 pm, this French restaurant is more than willing to give a feast for the five senses to all its guests. That is, take note, if they are in a Jacket and tie attire and with reservations.</p>
<p>Le Cirque, even before it joined the Vegas scene, has already established its place in the the “fine dining” world. This restaurant traces its roots back at the Mayfair hotel in 1974. Unfortunately, people find the first Le Cirque restaurant unappealing, pushing Maccioni to close it. But, god really knows the things that bring joy to his other creations and Maccioni finally found the right place for Le Cirque at the Palace Hotel. Later, he developed the courage to build other Le Cirque branches around the U.S. The rest, as they say, is history.</p>
<p>From the moment one enters its dining area, it is clear that Le Cirque is really serious in living up to the image and theme it wants to portray. Designed by Adam D. Tihany, the restaurant&#8217;s interior is an art masterpiece in itself. The chairs are upholstered with striking orange stripes to match the circus-themed paintings posted in the walls and the dim yellow light emanating from the bizarre-shaped yet pretty chandeliers. But what is really the most fantastic aspect in the restaurant&#8217;s environment is its ceiling. Unlike other &#8220;fine dining&#8221; restaurants, Le Cirque&#8217;s ceiling is tented with rainbow-colored silk, giving the whole place a “circus tent illusion”.</p>
<p>Le Cirque features a superb menu. Executive Chef Steven Varga serves succulent and reasonably-priced French offerings. The appetizers are oddly enough, served cold and hot to awaken the taste buds. The lobster salad with black truffle dressing remains a Le Cirque classic favorite. Ahi tuna tartar with a quail egg, cucumber and caviar crème fraîche tastes as good as well. Le Cirque also transformed the traditional Gazpacho by enhancing it with the tasty Dungeness crab. During your next visit to Le Cirque, do not also forget to try other favorites like black tie scallops tied with black truffles, consomme de boeuf with foie gras ravioli, salade mesclun, roasted duck with honey-spice glaze with figs and roasted lobster in a port-wine sauce.</p>
<p>Le Cirque is also famous for its extensive world-class wine list which includes more than 900 international selections. Every dish can be matched with a specific type of wine for a better dining experience.</p>
<p>Le Cirque offers two dining options. A prix fixe three-course dinner that includes a choice of appetizer, main course and dessert ($95 per person) and a five-course and dessert degustation that changes nightly ($115 per person). Although it has a screaming price tag, the degustation menu is Le Cirque&#8217;s most popular dining option. This is because, under this, one can add wines, expertly chosen by sommelier Frederic Montondon to enhance his/her dinner. Take note that wine pairings change daily with the menus.</p>

<p>Headed by executive chefs Lauren Pillard and Hubert Keller, Fleur de Lys at the Mandalay Bay in Las Vegas is a fine dining restaurant that serves contemporary French, Mediterranean, and Middle Eastern cuisine. Executive chef Herbert Huller serves what many other establishments in the area consider as the best food in Las Vegas.</p>
<p>The Fleur de Lys offers a bevy of appetizers. Guests can start with Artisan Foie Gras “Au Torchon” with Rhubard-Rosemary Compote, Rhubard chips, and honey grenadine. There is also the Seared Ahi Tuna, which comes with tartare with ginger, consomme with bonito flakes, rillettes and tarragon. Other appetizers on the menu include the Cantaloupe Gazpacho with Pepper Brioche, Duck Ham and Aged Port Gelee, the Smoked Salmon Raviolis with Guacamole, Curry-Paprika Chips and Smoked Salmon Consomme, and theChilled Maine Lobster Salad in Balsamic Vinegar Reduction, Vanilla Oil, and Watermelon Granite.</p>
<p>There is also an extensive fish, crustacean and mollusk menu at the Fleur de Lys in Mandalay Bay, headed by the Slow Roasted Alaskan King Salmon with hazelnut crust, leeks, duck confit, and black perigold truffle vinaigrette. Other fine seafood dishes on Fleur de Lys&#8217; menu include the Grilled Diver Scallops with smoked salmon and sour crea ravioli, cucumber emulsion, and osetra caviar, and their Roasted Maine Lobster, a simple yet elegant dish served with carrot puree, pea shoot salad, mint oil, and curry orange sauce.</p>
<p>Mandalay Bay&#8217;s Fleur de Lys is also famous for their steaks and other meat dishes. Their 12 0z Le Steak, Aged prime rib eye steak, rustic potato stew “en Cocotte” is an instant classic, served with young spinach and sauced with a red wine and shallot reduction sauce. Fleur de Lys also serves Filet Mignon two ways, one topped with sauteed foie gras and the other with braised oxtail tortellini. People looking for a different way to have prime beef can opt for the Kobe Beef FleurBurger “Rossini”, which is served with sauteed foie gras, black Perigold truffles, and served on a shallot and truffle brioche bun laced with truffle sauce .</p>
<p>Their Roasted Young Chicken is a good alternative to red meat, and sits on chanterelle mushrooms, tomato confit, crispy polenta, and chamomile infused chicken jus. Other dishes that round up the menu of Fleur de Lys include the Duo of Veal Tenderloin and Braised Veal Cheek on seared corn and truffle risotto and finished with orange anis star sauce and the Colorado Lamb Loin and Lamb Shoulder Cannelloni with eggplant caviar, artichokes barigoule, and oriental lanb jus.</p>

<p>The Aureole at the Mandalay Bay Hotel is open for dinner during Sundays through Thursdays at 6:00 pm to 10:30 pm, and on Fridays and Saturdays at 5:30 pm to 10:30 pm. The Aureole at Mandalay Bay Hotel also has the Wine Tower Lounge, which is open from 6:00 pm to 12:00 pm.</p>
<p>Serving a three-course fixed price dinner and a seven-course celebration tasting menu, the Aureole at the Mandalay Bay Hotel serves their dinners in two areas, the main dining room and the swan court. Both dinners are paired with different wines upon request.</p>
<p>The first course choices at the Aureole include a bevy of different appetizers and soups. There is the American white sturgeo caviar, which is served in 1 oz. $60 supplements. The Aureole&#8217;s other choices for the first course include the warm Cypress grove goat cheese tartine with herb baguette, baby Arugula salad, and rhubard marmalade. The Hawaiian hamachi duo is another excellent appetizer, served with a fennel crust and Meyer lemon confit, as is the chilled lobster salad with piperade and cold-pressed olive oil. But out of all the offerings for the first course, it is the seared Hudson valley foie gras that simply delights every guest.</p>
<p>The main courses at the Aureole at the Mandalay Bay Hotel are an assortment of game, red meat, and the daily bounty from the sea. They have roasted skate wings served with new potatoes and brown butter beet reduction. Another dish that is preferred by many is the fennel steamed Alaskan salmon, plated with organic green asparagus and tomato spiked herbed hollandaise. The “Simply Grilled” John Dory is another favorite in the house, and is served with stuffed vegetables, bacon-braised baby chard, and coulis of fresh tomato. Chilean bass and seared Ahi tuna are other options for guests who wish to steer clear of red meat. Among the meat dishes served at the Aureole at Mandalay Bay, there is the roast loin of veal with chanterelles, a steak served with Yukon Gold potatoes and topped with a mushroom cognac sauce. Lamb is also served at the Aureole, in the form of roasted rack of Colorado lamb stuffed in Campari tomatoes, braised flageolet beans, Nicoise olives and rosemary jus.</p>

But there is actually more to this expression than just being a part of a classic. “Godspeed!” is also the best word there is in the English language to describe the House of Blues&#8217; brand of fun.</p>
<p>Indeed, this restaurant-cum-museum-cum-nightclub is a must-visit “attraction” inside the Mandalay Bay hotel. House of Blues is not only a museum that pays tribute to rock, reggae, rap, rockabilly, jazz and blues music legends, it is also a club “qualified” enough to play the legends&#8217; dance hits and a restaurant serving a wide variety of Southern cuisine.</p>
<p>Now, House of Blues is not just alive during nighttime. As said, “a part” of it is a fully-functioning restaurant serving traditional Southern cuisine with original touches. Extremely accessible, its restaurant is a great meeting place for social and corporate business. It is particularly good to visit this restaurant on Sundays to catch the soulful Sunday Gospel Brunch. The event features great live music (from a gospel choir singing songs to soothe you into being a glutton, well in a good way) and a traditional Southern food buffet.</p>
<p>House of Blues also has a Music Hall. This area has a large dance floor, amphitheater style seating and VIP viewing areas in a stylized eclectic environment. Some of the most famous artists of today&#8217;s music perform here regularly. Justin Timberlake and Akon, anyone?</p>
<p>At nighttime, House of Blues becomes more “daring”, thanks to its unique “nightclub part” that does not poison you into listening to the same tracks all throughout the week. We know it, you miss hearing Michael Learns to Rock and the likes, right? Depending on the night of the week, House of Blues can host some of your music guilty pleasures (and yes, including Michael Learns to Rock).</p>
<p>People particularly visit the House of Blues&#8217; club during Friday nights for &#8216;The Spazmatics&#8217;. This event plays the sounds of the 80s that can surely transport you back to the past. The event is perfect for those seeking pure 80s fun and excitement, and is not necessarily for people looking for a place where they could &#8216;hook up&#8217; and get dreadfully drunk. Well, it is not that House of Blues does not serve drinks. Of course it does, it is a club anyway. In fact, its drinks are the least expensive in Vegas!</p>
<p>The House of Blues club is not only “good” during Friday nights. In fact, if you loved &#8216;The Spazmatics&#8217;, you will also definitely enjoy the Saturday main night event. Saturday nights are called &#8216;Boogie Knights&#8217;, a deliciously goofy and retro event that appeals not only to the older folks but to the young as well. Prince also has a tribute during Sunday nights, and it is called called &#8216;Prince Reign&#8217;.</p>
<p>The House of Blues is also known for its foundation room. Situated at the very top of Mandalay Bay, this room is the home for a bar with comfy sofas, dark wood, fireplace and eclectic mix of music – from Marvin Gay, 80&#8217;s pop to reggae. </p>

But when you spend your night in Jet, you will remember that you got drunk in Jet (and that you had a very wonderful night of partying).</p>
<p>Jet is one-of-its-kind (well, almost). This club situated inside The Mirage, houses three distinct rooms, each playing its own music. The main room is for rock, hip-hop and popular dance music, while house music is second room&#8217;s vibe. Eclectic mixes ranging from 80s to rock are played solely in the third room. Jet is all about diversity and that is exactly what the Vegas crowd is looking for.</p>
<p>Well, not only the Vegas crowd, but the celebrities grazing Hollywood&#8217;s red carpets as well. Both Quentin Tarantino and Fergie had their birthday parties in Jet&#8217;s 15,000-square-feet-of-space. This club has also thrown parties for Sean “Diddy” Combs and Nelly Furtado, as well as played host to Britney Spears and Paris Hilton (what about LAX? It is Paris Hilton we are talking about here, anyway, so this is not surprising at all).</p>
<p>Just because Jet is a celebrity-famous nightclub does not mean that ordinary people are not important. Even the separate environments and the super famous (and intimidating) patrons are not enough to drive the masses off the club’s doors. In fact, through the doors they go, without any question. The club promises to give unrivaled service to all kinds of people coming inside its premises.</p>
<p>People do not just enter Jet to get the chance to see some celebrities that frequents the area. They also love to come for its amazing energy, music and service. Not to mention, the great Djs, hot go-go dancers gracing the environment with their alluring presence and cocktails. For your information, there are four full-service libation bars offering creative specialty cocktails inside Jet and European bottle service is featured in each of its room.</p>
<p>As expected from a creation of The Light Group (the same people who run other famous Vegas establishments like The Bank and Diablo’s Cantina), Jet provides quality music by using state-of-the-art speakers and equipments. Jet is miles away apart from other nightclubs when it comes to lighting and video technology (no doubt, celebrities choose the place for their personal occasions).</p>
<p>Jet also throws some of the craziest events Las Vegas has ever seen. Just, how crazy? Take for instance, the annual “Pole-A-Palooza.” This creatively named contest offers $10,000 to the best pole dancer and brings in talent from around the globe. There’s also the phenomenal “Boobs or Bust.” This annual contest finds female club-goers locked in competition for a pair of breast implants. <p>We all know that Studio 54 carries a hard-to-forget epic history, and the club&#8217;s interior perfectly commences this. Both old and young guests appreciate the large, black-and-white photographs taken by paparazzo Felice Quinto shot at the original Studio 54 in Manhattan, hanging throughout the club and hoping to inspire the party ambiance. There is also the famous man-in-the-moon that watched over the original Studio 54 club before.</p>
<p>But, aside from its very noticeable historical-over-flashy design and artistry, Studio 54 still attracts the crowds because of its unchanging customer service.</p>
<p>Studio 54 might not have a dance floor as big as those of newer nightclubs, but it has some pretty cool things to make up for the lack. Do other nightclubs have the retro confetti drops? Or do they have go-go dancers freely interacting with the guests? Of course not. Only Studio 54 has these.</p>
<p>Then there are Studio 54&#8217;s “accessible” bars. Newer nightclubs got too engrossed in giving their interiors the flashiest and &#8220;funkiest&#8221; accents that they totally forgot about their guests&#8217; convenience. Unlike in other clubs, bars at Studio 54 are equally “distributed” in its two floors. Plus, tables and booths are placed in just about every corner of the club, so if you like being near the dance floor (or hate being near the dance floor), that could easily be arranged. All these mean less hassles and more fun.</p>
<p>As for parties, well, Studio 54, being a historical party organizer that it is, always has a full party schedule. Studio 54 is almost always doing something interesting to surprise guests. Go ahead and check out Studio 54&#8217;s brand of partying and you will surely come back the next night (or your next visit to Las Vegas) for more.</p>
<p>And, oh, there is also another thing about Studio 54 that sets it apart from other nightclubs. Since nightclubs are made to provide hard partying and fun, there is technically no place inside them that could accommodate relaxation (a resting place, perhaps) and probably, surprise conversations (who knows, you might stumble upon a long lost friend inside the club while partying). Much to its first time guests&#8217; surprise, the hallway outside Studio 54&#8217;s club area has a few spots to sit down. You are not going to want to spend your whole night out there, but it is perfect to break for a minute.</p>
<p>Above all, Studio 54 is the only nightclub in Las Vegas that keeps an old-school atmosphere and proud of it. No doubt, old folks and those “in the middle” choose it over other partying abodes. Studio 54 gives those over twenty five the right to wear low rise jeans and shorts, without getting embarrassed or conscious. That is what we like about this club, really.</p>

You do not have to travel your way to Egypt to see a pyramid, Luxor is just in the Strip to grab your attention. If you are a fan of art, just walk your way in to Bellagio and your day is complete.</p>
<p>Last September 2005, Las Vegas added another addition to its themed-establishments collection. Located near the Strip-side entrance of The Grand Canal Shoppes in The Venetian, is Tao, an Asian-influenced nightclub.</p>
<p>Now, there are tons of other nightclubs near Tao that can out-customer our clubbing rookie. Guess what, no matter what they do, it just does not work. Tao always attracts the people and the celebrities and throws some of the most outlandish parties in the whole of Vegas.</p>
<p>What is it in Tao that keeps it on top? The premise is not just hard-nightclub, as in music, alcohol, DJ, party, and did we already mention, alcohol? Tao&#8217;s first floor serves as the lounge and the restaurant. Before the whole premise transforms into a nightclub, complete with the reddish lights, fast-beat music and all, at night, Tao serves family-friendly (unless you do not want your curious children to ask you questions about why the second floor is inaccessible “as of the moment”) Kobe beef and giant fortune cookies in its restaurant. For more reasons why the Tao restaurant is your stomach&#8217;s &#8220;Tao&#8221; for good food, aside from the almost-authentic Buddha statue standing there (that is already given), go drop Kelly Clarkson and Sarah Michelle Gellar a note. And, we are not kidding here.</p>
<p>The lounge area near the restaurant serves as the main entrance of the Tao nightclub. But its open on days too, mind you.</p>
<p>The lounge area and the restaurant takes up a large space that you could mistake as the club itself, but there is more to expect from Tao. The staircase near the lounge&#8217;s bar takes you to the whole club area that could accommodate up to 3,000 people in collared shirts and dress shoes (now, that is a whole new large space).</p>
<p>Aside from its space, another factor that makes Tao different from other nightclubs is its versatility. The club has sections, and each sections has different rooms that play distinct music styles. So, that means if you are not in the mood for hard disco music, you can transfer to the R&#038;B section for a softer and relaxing ambiance. The different bars inside the Tao nightclub also embrace that versatility factor. You get it, they all have separate themes.</p>
<p>In Tao you can watch a go-go dancer, sweat it all out in the dance floor, or get private in a VIP booth. Go and see for yourself.</p>
<p>And, oh, by the way, Tao opened the Tao Beach in 2007, as a part of their “versatility” campaign. This serves as a poolside extension of the nightclub.</p>

			<content:encoded><![CDATA[<p>Okay, which one from the three million nightclubs currently operating in Las Vegas is the best and the hottest?</p>
<p>Wait. You do not have to answer that. If you try to &#8220;evaluate&#8221; each of them using their own marketing stuff, you will just end up doing something that is brain-drenching and thus, a big no. You are in Las Vegas to have fun anyway, not to do something that is technically more difficult than your college Calculus exam.</p>
<p>So, what now? Since majority of the nightclubs in Las Vegas would like you to classify them as one of the hottest nightclubs, go, without any question, to the one that does the opposite (well, sort of). In other words, go to LAX. Instead of just talking about being hot, LAX is actually hot. Located inside the Luxor hotel, this nightclub&#8217;s hotness not just comes from its Gothic-underground ambiance. Its appeal also comes from the fully-functioning Bar inside it, which is the Noir Bar. What is so special about Noir? This bar, oddly enough, is the opposite of LAX. Being a nightclub, LAX is obviously all dance, noise and fun. Noir, on the other hand, features privacy, subtlety and sheer elegance. Unfortunately, we hesitate to tell you much more than that. Go and figure out yourself (it is not a waste of time, we promise).</p>
<p>Now, for the really good stuff. If you are new to Las Vegas&#8217; nightlife, LAX&#8217;s entrance would surely make you gasp (not that patrons do not do so too every time they enter). Set into the &#8220;deepest&#8221; part of the pyramidal Luxor, LAX&#8217;s gate is a huge, Gothic ensemble. After entering, you will notice a space in the middle. Well, that is Noir Bar (the bar we have mentioned earlier). Walk further the entrance path and you will see the blue-lit stairwells which lead the way to a room that carries a part of the Noir Bar (that is therefore covered with weird red pieces and accents to hide the awkward &#8220;structure&#8221;).</p>
<p>Beyond the room is the club. What is odd about LAX is that it is a two-level club. Sounds unappealing? Actually, no. Celebrities find the idea interesting, as this gives them the chance to do &#8220;grand entrances&#8221;. No kidding, go ask Paris Hilton. The two levels are creatively connected through a staircase. You can make a dramatic entrance there too; just be sure that you have poise and you do not trip. If you fail to do so, everyone will surely laugh at you (You do not want that, right? Unless you really want to grab the whole club&#8217;s spotlight quickly and we mean that quickly). The lower level houses VIP seating, a dance floor and alcohol, while the upper level houses VIP seating, a dance floor and alcohol (no pun intended). Somewhere in between the two levels is DJ Vice&#8217;s throne, the club&#8217;s DJ booth.</p>
<p>Aside from its well-presented elements, another thing that sets LAX apart from other night clubs is that it is full of surprises. Despite not being around as long as other clubs (it only opened last 2007), LAX already earned a place as a club that will surprise you every time you stop by. Just last summer of 2008, they hosted a series of unannounced concerts of The Game and Fat Joe. Plus, there is almost always someone interesting sitting in VIP (minus, Paris Hilton, of course). Who knows, probably during your next visit, they will invite David Archuleta to sing a song that you would no expect him to sing – probably, Snoop Dog tracks?</p>

<p>The Forum Shops has successfully redefined the visual stimulation that mall shopping offers. <p>The Seablue at MGM Grand is the remarkable creation of Chef Michael Mina, a James Beard award-winning celebrity chef and restaurateur born in Cairo, Egypt. He is also the author of Michael Mina: The Cookbook, a book that presents his “trio concept” to the culinary world. </p>
<p>The Seablue at MG Grand is one of Chef Michael Mina&#8217;s finest restaurants, an innovative and intimate destination that comes complete with two very lively open kitchens where their signature seafood is prepared over a wood-fired grill. Walls of stone and water adorn the many corners of the Seablue at MGM Grand, signaling that here is truly the best place to be served seafood in Las Vegas.</p>
<p>Featured on the cover of Wine Spectator, Seablue has Stephen Hopcraft as its executive chef. The menu contains some of the best creations between the two chefs, with the main highlights being Tasting of 3 Appetizers, the 16 oz. Prime Bone-In NY Strip, and their signature Seablue Paella.</p>
<p>Seablue&#8217;s menu varies from time to time, as their fish and seafood are subject to availability and are flown in fresh daily. Open at 5:30 pm to 10:00 pm on Sundays through Thursdays and 5:30 pm to 10:30 pm on Fridays and Saturdays, Seablue is a non-smoking restaurant where you can either just walk in and order or have a table reserved. Take note that the attire is business casual, and that they require reservations for a party of nine or more.</p>
<p>The Seablue at MGM Grand has a variety of appetizers that will truly set the tone for an evening of good eats. Their usual three choices for raw appetizers are the Tuna Tartare, Grilled Pita and Red Onion, the King Salmon and Osetra Caviar with Lemon Vinaigrette, and the Yellow Tail with Spicy Green Beans and Lime Oil. You may also avail of the “Small Plate Style” Tasting Of All Three. They also have a bevy of choices for marinated appetizers for those who wish to try on their more savory beginners. Try the Nantucket Bay Scallop Seviche on Levash Crackers or the Chilled Greenlip Mussels, Pequillo Peppers and Basil.</p>
<p>But of course, the focus of the evening is Seablue&#8217;s versatile Entrees menu. All of their entrees are cooked in Moroccan clay ovens called Tagines, and are cooked with many different flavorful oils and exotic vinegars and juices that replace the use of cream and butter. Their Pacific King Salmon is a crowd-drawer and is served with roasted cauliflower, large pieces of asparagus, and curried couscous. There is also the Chilean Sea Bass, served with elephant garlic confit, steamed mussels, rapini, and smoked bacon. Another regular favorite is their “Angry Lobster”, which is a 2lb Maine Lobster that is plated with braised artichokes, baby bell peppers, preserved tomatoes, and basil Orzo.</p>

The enlightening art experience continues in the lobby where the vibrant flower petal chandelier of Dale Chihuly, called “Fiori di Como”, hangs. The piece gives out an enchanting illusionary scene of a garden growing on the hotel&#8217;s 18-foot ceiling. Bordering the front desk is a display of landscaped flowers, which becomes more beautiful when they coincide with the blooming of natural flowers at the neighboring glass-topped Bellagio Conservatory and Botanical Gardens.<br />
